Wine obtained from a temperature-controlled fermentation with indigenous yeasts of selected grapes.
The vineyard Eleonora is composed from native grapes such as CORTESE, the FAVORITA, the TIMORASSO, and a few strains of Moscato and Malvasia.
The grapes are all brought to slightly over-ripe on the vine and then harvested and vinified all together.
The resulting wine inherits its structure from Cortese and Favorita and the minerality from Timorasso.
Each vintage is characterized by different shades that change over time evolving into infinite combinations of taste sensations.
Color: Pale yellow intense, brilliant. In the nose: Fine, intense, clean. Presence of yellow fruits,floral notes and mineral aroma with hint of honey. On the palate: Warm, full-bodied, soft, balanced. Good persistence.
Food matches: Appetizers with vegetables, pasta with vegetables, fish and white meat.
