This sparkling italian wine, from 100 % Pinot Bianco grapes, is made from beginning to the end in accordance to the champagne producing method (champenois). After primary fermentation a second fermentation process occurs in the bottle. Small amounts of French yeast from Reims induces the second fermentation process. The bottles are manually turned each day a fraction, a process called remuage. After bottling they are closed with a special natural cork by hand. The bottles are in a simple black. Fine bubbles fill the glass with a light-yellow and greenish colour. A fine flowery mineral aroma combined with a scent of ripe fruits (apple, peach) delight nose and mouth in the opening but also in the short and medium finish.
