Bottle-fermented italian sparkling wine in the classic method from 100% Chardonnay grapes
Winemaking: The harvest is done by hand with strict selection of grapes. In years when maturation occurs in very hot days, the grapes are harvested only in the very early hours of the morning in order to have fresh grapes with higher acidity. The wine is made with soft pressing, decantation of the must and fermentation at controlled temperature.
Maturation: Aged for at least five years in ancient caves carved into the tufa natural and constant temperature of 12 ° C.
Refinement: After disgorgement rests for at least six months before being marketed.
Longevity: After disgorgement can benefit from some years of aging only if kept in a horizontal position at a constant temperature not exceeding 12 ° C
Color: Pale gold, fine and persistent perlage, foam pannosa. Perfume: Typical aroma of freshly baked bread crust. Taste: Dry, fruity, fresh.
Food pairings: Produced with dosage "zero" (nature) or Brut, perfect as an aperitif with smoked salmon, caviar, shellfish, seafood, parmesan, pecorino Maremma medium or aging, dined, with all the dishes of fish.
