Vinification:The grapes are harvested by hand vinified in stainless steel tanks using only the yeasts naturally present on the skins, the duration of the maceration is approximately 10-12 days at a temperature of 24°-26° C during which are carried frequent wetting of the hair in order to facilitate the extraction of the color and the tannins conteined in peel.
Ageing: The wine rests in Slavonian oak barrels for 18 months for the malolactic fermentation. Aging in bottle at least 8 months.

Sensory characteristics: red color wine, aromas are wide, fruity with scent of flowers and spices. Elegant, refined and with a pleasant sour note on the palate. It's a wine that can age for many years and well represents the Etna territory and in particular the microterritorio of Passopisciaro.
